Cary restaurant to compete in World Food Championship

Over the weekend, the Corner Tavern and Grill won the 2015 Bull Outdoor Regional Best Burger contest held at Choice Pool and Spa in Wake Forest.

The contest was one of six best burger competitions Bull Outdoor Products has hosted across the country. Each regional winner moves on to compete for a $100,000 grand prize in the World Food Championships held Nov. 3-10 in Kissimmee, Fla.

CHICAGO (WLS) -- On July 25, 2015, chefs from around the country came to Chicago to create one-of-a-kind burgers in the American Sale Bull Burger Battle. The competition was created in 2013. I was honored to be a judge at the Burger Battle sponsored by Bull Outdoor Products and totally inspired by the burgers that were turned in. I created this burger a while back and thought it worth revisiting. This burger is BIG ON FLAVOR! It’s all there – spicy heat from the blackening spices complimented with cool blue cheese, and a sweet-tartness from the red onion jam! I normally wouldn’t add breadcrumbs to a burger, but the red wine reduction adds so much flavor that it needs something to hang on to.

Zin-tastic Red Wine Shallot Burgers

I really love grilled beef that has been soaked in red wine. However, it’s kinda hard to do with a burger. To get over that little hump, I reduced a hearty zinfandel wine with finely chopped shallots until there was next to nothing left of the wine. All that red wine deliciousness gets stored into the shallots and the mixed in with the ground beef. The shallots pull double-duty — in addition to holding all that wonderful zinfandel flavor, they also provide a little extra moisture to the burgers. Win-win!
