Red, Black and Blue Burger

I was honored to be a judge at the Burger Battle sponsored by Bull Outdoor Products and totally inspired by the burgers that were turned in. I created this burger a while back and thought it worth revisiting. This burger is BIG ON FLAVOR! It’s all there – spicy heat from the blackening spices complimented with cool blue cheese, and a sweet-tartness from the red onion jam! I normally wouldn’t add breadcrumbs to a burger, but the red wine reduction adds so much flavor that it needs something to hang on to.

Zin-tastic Red Wine Shallot Burgers

I really love grilled beef that has been soaked in red wine. However, it’s kinda hard to do with a burger. To get over that little hump, I reduced a hearty zinfandel wine with finely chopped shallots until there was next to nothing left of the wine. All that red wine deliciousness gets stored into the shallots and the mixed in with the ground beef. The shallots pull double-duty — in addition to holding all that wonderful zinfandel flavor, they also provide a little extra moisture to the burgers. Win-win!

True as the saying goes, “if at first you don’t succeed, try again”, Owen Hohl recently took on Bull Outdoor® Product’s Bull Burger Battle challenge for the second year in a row. Driven by redemption after a disappointing defeat in 2013, this time, Hohl walked away with the first place honors. Chef Owen Hohl, who turned in his original Cajun Burger recipe, will now go on to compete in the World Burger Championship as part of Team Bull at the World Food Championships in Downtown Las Vegas, Nov. 12-18.

Wantagh Resident and Sandy Survivor, Skip Day, Wins Bull Burger Battle in Mahopac

Skip Day, a former deli owner who was forced to close his business in the wake of Hurricane Sandy now has the opportunity at a huge culinary comeback. After winning first place at the Bull Burger Battle in Mahopac, Skip, a Wantagh, N.Y. resident, has earned himself a spot on Team Bull to compete in the World Burger Championship at the World Food Championships in Las Vegas, Nov. 12-18.
